Burnt Onion Gravy

Notes:
This wonderful onion gravy is great with Creamy Mashed Potatoes. Note the absence of butter. Consequently, this recipe is heart-healthy!
1 tablespoon of safflower or olive oil |
1 large onion, sliced |
1 1/2 cups water |
2 teaspoons vegetable seasoning (Mrs. Dash, Spike or Veg-it) |
1/2 t Tarragon |
1/8 tea. Sage |
1/4 tea. Chervil |
Dash of nutmeg |
- Heat oil in a large skillet.
- Add sliced onion and sauté over medium-high heat until onion begins to brown. Add water, vegetable seasoning, tarragon, sage, chervil and nutmeg.
- Bring to a boil and lower to medium-low heat. Cook until gravy is reduced to about 3/4 cup.
- Makes 3 to 4 servings.
